1/3 cup Frantoio extra virgin olive oil
1 ½ cups unsifted all-purpose flour
1 cup granulated sugar
¼ cup unsweetened cocoa powder
1 tsp baking soda
½ tsp. salt
1 cup cold water
1 tbsp white vinegar
½ tsp. vanilla extract
Heat oven to 350 degrees.
Grease 8" round cake tin.
In a medium size bowl stir together the solids (flour, granulated sugar, cocoa, baking soda and salt) combining well with a fork.
Add liquids (water, oil, vinegar, and vanilla) and blend well with a wooden spoon.
Pour cake batter into the greased pan.
Bake for 30 to 35 minutes or until the centre springs back when gently pressed.
Cool in pan on wire rack for 10 minutes and then turn out onto cake plate and sprinkle with confectioners' sugar.
